Apple Pie Rolled Burritos


I'm sure I have told you about our one lonely apple tree in the backyard. You know, the tree that gave us a handful of apples last year, and then decided to give us FIVE HUNDRED apples this year!?! Oh, and gave them to us back in June and July...which is NOT apple season! Well, it has really been kind of a treat! And in my efforts to not have all those apples go to waste, I made and froze several ziplock gallon bags of apple pie mix. Now that it's Fall, and officially apple season, I am putting those bags to good use.

This is probably one of the easiest recipes I have! It takes little more than a package of tortillas, apples, or apple pie filling, and some butter. Can be served warm or cold. My family likes this best warm, with a side of vanilla ice cream. The perfect Fall dessert!


Ingredients:
6-8 apples (any kind you like) peeled, cored, and sliced
1/2 cup granulated sugar
1/2 cup brown sugar
1 tsp cinnamon
1/4 stick butter, melted
8 flour tortillas (I use medium size)
Cinnamon Sugar Sprinkles:
1/4 cup sugar
1 tsp cinnamon
Combine in a small dish or shaker; set aside

Directions:
Preheat your oven to 350 degrees. In a large bowl, mix your sliced apples, granulated sugar, brown sugar, and cinnamon; make sure each slice is coated with the mixture. Warm your tortillas in the microwave for about 20 seconds; just long enough to soften them. (It  helps them to fold/roll better.)  Brush a small amount of melted butter onto bottom of 9x13 baking dish. Spoon about 1/2 cup of apple mix on the center of each tortilla. Roll and tuck, kind of like a rolled taco. Lay seam side down in baking dish. Brush each tortilla roll with a small amount of melted butter. Generously sprinkle with cinnamon/sugar mix. Cover and bake for 45 minutes; removing foil last 10 minutes of bake time. *Makes 8 rolled burritos
(I can usually fit all 8 burrito/rolls in a 9x13 dish. I used 2 smaller dishes this time)
